I actually do have a non-sexist question for graphic/lighting artists... Is the difference here purely lighting? Can we not yet animate/capture a face's structure as well real life (still fantastic tho)? Do they purposefully tweak facial scans in some way to make them more game friendly? Other?

It's lighting but also camera FOV. That significantly changes the way the face www.reddit.com/r/analog/com... Check out this reddit post, it shows how different FOV changes how the face looks. (and thank you for posting about this, that post fucking sucks and I didn't want to amplify it at all)

I can confirm that many times in-game likenesses are adjusted with the specific intent of avoiding an exact 1:1 likeness recreation, for multiple contributing reasons best summarized as its not the actor, its a character.

Stolen from Twitter, more examples and not a single handpicked one, you can see the amazing work, range, and detail here:

Ohhhh, is the one of the right actually the more accurate representation of the actor with lighting controlled when scanning happened? Oh! Or is she maybe a little bit different due to being the mother of Atreus, that lil troublemaker?
