One of those folding metal steamers that goes in the pot with a piece of baking paper. There are nine tamales that were not wrapped in corn husks when steamed. The tamales have mostly split as a result of not being wrapped, revealing the refried bean filling.
Based on some fan response, it's worth noting that about 80% of our staff is representative of the LGBQTIA+ community, and we staunchly believe in having those voices heard and supporting the community. A recipe that was for a tamale that instead of having a filling, it included what would be the filling into the dough. And three using fresh masa. Then with six remaining recipes I write out in a spreadsheet and convert the amounts all down to tsp or grams. With that I pick the "main" ingredient, which mostly just means whichever ingredient makes up the majority of the recipe, the masa harina in this case. With that decided, I make each of the other ingredients cell a formula based on the main ingredient. So main A and secondary B. I put in cell B, =A/B the result being C. I copy all the secondary and paste the values below. That allows me to change =A/B to =A/C. That returns the displayed value to what it was, except now when you change A, B changes to match the change. There is probably a better way to do this. Then I get the average and median of all the amounts. I normally go by the average, but median has proven useful. This also involves rounding based on limitations of equipment. For instance, I have 1/4 and 1/2 tsp measuring spoons, but not 1/3. I also look for places to simplify. So any amount of tsps that are divisible by 3 gets turned into tbsp. My results for masa para tamale are as follows. Masa harina 1/2 cup, kosher salt 1/2 tsp, baking powder 1/4 tsp, broth 22 tsp, and oil 7 tsp I used chicken broth and peanut oil. Though they can easily be switched out. In particular, the oil is traditionally lard. Also, the broth can be replaced with water, but you're removing flavor if you do that. To make the dough, I start by mixing the masa harina and oil. Then I mix in the salt and baking soda. After that I gradually mix in the broth. With that you have the dough and just need a filling and wrapper. Then you steam them for 1 hour to 1.5 hours. Then you remove them from the steam and let sit for 10 min to firm up.

I drew this on paper near on 2 decades ago, then scanned it in with the family 3-in-1 printer, after which I cleaned it up in adobe illustrator. It has been my profile picture since before I was even going by Akhier Dragonheart. I've had one other pfp that I used for a short time and I have commissioned another pfp, but I keep coming back to this. I guess you could say I'm sort of attached to it. It is a side view of a green dragon's head, in specific, my head. There is a spine ridge down the back with darker green spines and a lighter green connecting bit.
