The research featured on this cover uses a method called Neutral Desorption Extractive Electrospray Ionization Mass Spectrometry (ND-EESI-MS), along with multivariate statistical analysis, to quickly assess the quality of high-viscosity rice soup. The study looked at both natural ingredients—such as 3-methyl-2-butenoic acid, salicylic acid, and rhamnose—and external contaminants like heavy metals and pesticide residues that can affect the soup’s quality. The goal was to create a fast and reliable way to evaluate rice soup quality, offering a new and effective approach to food safety and quality control.
