A bird (sorry I have no idea what this bird is called, despite having worked in an ornithology lab in college? My brain has dumped all that info to make way for obscure facts about historic theme parks. Did you know that the lead horse on the Disneyland carousel is named Jingles? ) with black feathers and yellow-ish speckles, and iridescent purple and green feathers on the neck and chest. Eggnog Christmas Salad 2 8¾-oz. cans crushed pineapple with juice tbsp. unflavored gelatin 3 tbsp. fresh lime juice 1 ½ c. eggnog % c. chopped celery 1 3-oz. pkg. raspberry gelatin 1 ½ c. boiling water 1 10-oz. pkg. frozen cranberry-orange relish Salad greens Drain pineapple juice into saucepan; heat to boiling. Soften gelatin in lime juice; dissolve in boiling pineapple juice. Cool. Add eggnog; chill until partially set. Fold in drained pineapple and celery. Pour into mold; chill until firm. Dissolve raspberry gelatin in boiling water; add cranberry-orange relish, stirring the mixture until relish is thawed. Chill until mixture begins to thicken. When eggnog mixture is almost firm, pour raspberry gelatin mixture on top. Chill until set. Unmold on salad greens.
Peanut Butter Onions 3 to 4 c. chopped onions Cream sauce 1 to 2 tbsp. peanut butter Cook onions until tender. Combine cream sauce and peanut butter; stir into onions. If small onions are used, leave them whole. Yield: 6 servings. Sister Mary Clarelle, Home Economics Teacher, Delphos, Ohio
