Brad’s Stuffing Ingredients: • 1 loaf french bread • olive oil • salt  • pepper • 1 lb maple breakfast sausage • 1 onion, diced • 3 celery stalks, sliced • 1 stick butter • 1-2 TBsp dried sage • 1 TBsp dried parsley • ~2-4 cups chicken stock Directions: Croutons: Cut the fresh bread into cubes and toss in a large bowl with a drizzle of olive oil, a pinch of salt and some fresh ground pepper. Spread it out on a sheet pan and bake at 375 in the oven for 5-10 minutes to brown. Stir once to brown both sides. Usually I do this the night before, let the croutons cool and put them in ziplock bags for the next day. Flavor Bomb: Brown and crumble sausage in a large frying pan. Once cooked through remove to a paper towel-lined plate with a slotted spoon. Add stick of butter to pan and melt. Add chopped onions and celery along with salt and pepper. Sweat the vegetables over medium heat until soft and translucent. Mix in the dried herbs and add back the crumbled sausage. Can also be done the night before. Just stick it in Tupperware in the fridge and microwave it the next day. Final Assembly: In large bowl stir croutons together with meat and vegetable mixture until well distributed. Stir in chicken stock gradually until mixture is gooshy, but not soupy. Press stuffing evenly into greased 13x9 pan and bake at 350 degrees for 40 minutes.
Brad’s Perfect Mac & Cheese Ingredients: • 16oz Pasta (penne, macaroni or similar) • 1 Onion • 2-3 Cloves Garlic • 3-4 Banana Peppers (or equivalent amount of deli pepper rings) • 4 tablespoons butter • 4 tablespoons All Purpose Flour • 4 cups Milk • 2 teaspoons Paprika • 2 tablespoons Sweet Hot Mustard • 1-2 tablespoons Sriracha Hot Sauce • 8 oz Sharp Cheddar • 8 oz Smoked Gouda • 4 oz Fontina • 2 oz Parmigiana • 2 oz American Cheese • 1 cup Bread Crumbs and 2 tablespoons Melted Butter Directions: 1. Preheat oven to 350 degrees. Grease 13x9 pan with cooking spray. Bring pot of salted water to boil. 2. Dice onion. Mince garlic. Chop peppers. 3. Cook pasta according to direction on package. Drain, return to empty pot and set aside. 4. Melt butter in saucepan on medium heat. Add onions and sweat until translucent. Add garlic and peppers, season with salt and pepper, and saute for another 2 minutes. 5. Whisk in flour to create a roux. Cook until pale blonde. Turn up heat to medium-high. Slowly add milk while whisking. Stir often until sauce comes to a boil. Reduce heat to low. Season with salt and pepper to taste and add mustard, hot sauce and paprika. Stir in half the cheddar and all other cheeses in small batches until fully melted. 6. Pour sauce over pasta in large pot and fold together. Transfer to greased 13x9 pan. Sprinkle remaining cheddar evenly over the top. Mix breadcrumbs with melted butter and spread evenly as a topping. 7. Bake for 30 minutes.
