It remains in service with a substantial refit because starships are expensive. It serves as a quick response mission ship, and unofficially as the errand runner and taxi for a certain picky admiral. Even as most others in its class have been disassembled, and used to construct the Centaur class ships. The Unicorn features modest accommodations for whatever important persons it should happen to be shuttling. It was outfitted with a holodeck as part of its refit. The deployable antenna modules are usually swapped out to store more fuel, cargo, or crew accommodations. Although the warp systems were designed to overcome limitations that are no longer relevant with modern ships, they still provide the ship with maneuverability and versatility. As well as at least keeping pace with modern ships. It’s redundant systems allow it to achieve high warp after losing a warp core, and any one or pair of its nacells.
