Banana bread fresh from the oven, a perfect brown with a single crack. The trick is to BUTTER the pan and sprinkle it with cinnamon sugar for a non-dry delicious crust. Brown sugar instead of white for an even moister loaf. Banana Bread 3 medium (7" to 7-7/8" long) ripe bananas, mashed 1 cup dark brown sugar (213 grams) 1 egg ¼ cup melted butter 1 teaspoon salt 1 tsp vanilla 1 tsp nutmeg 1 cup raisins 1 cup coarsely chopped pecans (optional) 1 ½ cups all-purpose flour (180 grams) 1 teaspoon baking soda Preheat oven to 325 degrees F (165 degrees C). Prepare a 9x5-inch loaf pan by generously greasing the bottom and sides with butter and dusting it with cinnamon sugar. This makes for a very moist flavorful crust, do not skip this step! Whisk together the soda and flour. Mix wet ingredients, including sugar, salt and raisins. Blend in flour and soda JUST UNTIL INCORPORATED. Pour into pan, bake about an hour. Toothpick should be clean.
