<p>Avon Lake -- The Avon Lake Police Department was contacted by a resident on May 17 regarding a stray cat found underneath a vehicle. The resident advised they transported the cat to a local animal hospital for treatment. </p><p>The West Park Animal Hospital later contacted the Avon Lake Police Department after determining the cat had been shot with a pellet gun. Due to the severity of the injuries, the cat was euthanized.</p>

<p>Avon Lake – After a 5 1/2-hour marathon meeting that featured extensive input from residents, attorneys, council members, Mayor Mark Spaetzel and representatives of the Avon Lake Environmental Redevelopment Group, City Council voted Monday to approve two key measures tied to redevelopment of the former power plant property.</p><p>Council first approved Ordinance 26-36, creating the Lakefront Mixed-Use Overlay District, by a 4-3 vote. Voting in favor were Dave Kos, Jennifer Fenderbosch, Geoffrey Smith and Matthew Reynolds. Voting no were Rob Shahmir, Amy Gentry and Kayla Goodwin.</p>

<p>Avon Lake<i> </i>– The Government Finance Officers Association of the United States and Canada (GFOA) has awarded the Certificate of Achievement for Excellence in Financial Reporting to the City of Avon Lake for its Annual Comprehensive Financial Report (ACFR) for the fiscal year ended December 31, 2024. The City’s ACFR has been judged by an impartial panel to meet the high standards of the GFOA program, which includes demonstrating a constructive “spirit of full disclosure” to clearly communicate its financial story and motivate potential users and user groups to read the report, according to a press release. </p><p>The GFOA Certificate of Achievement is the highest form of recognition in governmental accounting and financial reporting. This is the tenth consecutive time that the City of Avon Lake has received this recognition.</p>

To nail that textural balance, use thick, restaurant-style tortilla chips -- or fry your own -- the thin supermarket varieties will sadly turn to mush. This recipe coats the chips in just a small amount of smoky, citrusy tomatillo salsa, which helps them withstand the egg cooking process and retain their bite. Using the same skillet to char the salsa ingredients and cook the eggs on top of the chips streamlines prep and clean-up. The addition of canned black beans adds heft, making this an ideal breakfast-for-dinner meal. Serve it doused with the remaining salsa and generous scoops of sour cream and avocado to offset the heat and acidity.</p>

<p>These thick and buttery shortbread rounds are a riff on the ones sold by Walker’s Shortbread in Scotland. The main point of difference between Highlander shortbread and other varieties is the sparkly Demerara sugar that coats the edges, adding a distinctive sweet crunch. Using a small percentage of rice flour or cornstarch in the dough gives these an especially crumbly-soft texture while using all wheat flour makes them slightly snappier. Use what you have, relish the results.</p><p>Total Time: 2 hours</p>

<p>Together, sardines and avocado make a rich pair. Here, the combination is balanced by rubbing a raw garlic clove on the warm toast and stirring together a vinaigrette right in the sardine tin using its seasoned oil. (You could also add capers, chives or everything bagel seasoning for more punch). Instead of slicing the avocado, scoop it out with a spoon, so that the vinaigrette can pool inside the little nooks instead of slipping off the toasts. Now’s also a great time to use smoked or seasoned sardines.</p><p>Total Time: 10 minutes</p>
