Makes ~12 Servings 2 lb Boneless Ribeye or Short Rib - 1 in Cubes 2 Russett Potatoes - Peeled, 1in cubes 2 Medium Carrots - Peeled, 1/2in diagonal rounds 1 Honeycrisp Apple - Peeled, 1/2in cubes 1 Red Onion - Cut into 1in chunks 1 Clove Garlic - Diced 1 Tbsp Avocado or Olive Oil 1 Tbsp Unsalted Butter 4 cups Chicken Stock 1 cup water (optional, adjust for thickness) 1 ~8oz Box of Curry - Golden or Vermont - Medium+ Spice 1/4 cup Dark Chocolate Chips (72% Cacao preferred) 1 cup Whole Milk Greek Yogurt (Lowfat optional) 1 cup Cooked White or Basmati Rice per Serving (12 total)
