Quin bean salad 1c Quinoa, 1 can each black and white beans, 1 red and 1 orange bell pepper, 1 smallish zucchini, 2+ c kale, less than 1 c kalamata olives, 1/4 c banana peppers, 1 crumbled round cotija Dressing: 1/2 c neutral oil, 1/4 c apple cider vinegar, 1/4 c lime juice, 1.5tsp salt, 1/2 tsp cumin, 1/2 tsp oregano or more, big spoon of jarlic, 1/2 tsp black pepper, 1/2 tsp ground mustard Notes: -experiment with cayenne next time -roasted corn -maybe just a couple drops of sesame oil?
