Screenshot of email. Okay, I'm gonna make this complicated for you because that's how I do it. Your turkey should be thawed and brining tomorrow. Take the giblets and the WINGS off the bird and brown them in the oven for a little bit and then put them on to simmer all day in a crockpot preferably but on the stove if you have to. Someone will need to add water at some point unless you have a hellish big pot. This will be the stock for your dressing and gravy. On the night before or morning of Thanksgiving you can pick the meat off the wings and throw it into the bowl for the stuffing, throw the rest of the giblets to a deserving cat or leave them out for birds. Now here's your recipe: Mix up two eggs with a can of cream of chicken or cream of chicken and mushroom soup, thin it down with some cooled stock. Chop up an onion or two and as many stalks of celery as you can stand and cook them up with a one pound roll of sage sausage. Throw the sausage/celery/onion into a big bowl with a bag of pepperidge farm stuffing herbed cubes. Mix in the soup stuff, add some more sage (not too much....maybe a teaspoon for just one bag of stuffing), a little thyme, salt and pepper. Now thin the stuff down even more with more stock. It should be soupy shit. Let it rest a little, letting the bread soak up some of the soup and check to make sure that it's still got a little stock just sort of sitting off to the sides but otherwise has congealed slightly. Now bake. Put it in a 9x 13 pan and cook until it's as dry as you like it. Make sure to make some good gravy with the rest of your stock as that's the best part of eating leftover stuffing and mashed potatoes.
