Maccheroni al ferretto di modo nostro Simple: Red onions, Nduja, Pecorino Romano. That's it. All the spiciness from the Nduja, lots of creaminess from the cheese. Excellent.

Adding Pecorino Romano to the list of ingredients I have at home all the time removed the need for cream altogether. Pecorino has such a beautiful melt and with a dash of pasta water, it gets so incredibly creamy.
