On an offsides call the referee is supposed to be looking at two totally different things sometimes separated by dozens of yards.

I don't think this is true at all. That's a static situation with a pretty well defined zone. Much more difficult to ref football or basketball when both the ref and players are moving.
Determining the spot of the ball after a QB sneak. 22 bodies colliding at/near the point of attack and very little opportunity for either wing official to clearly see where the ball was when the QBs knee hit the ground. No chance for referee, umpire, or back judge to help.
Hockey ref here and can confirm, hockey does move faster and more continuously than other sports. However, the bright side is that when we call men’s league games, we can pop into one of the locker rooms for postgame adult beverages.
