If you want to use the more improved dictation feature in iOS 27, you must enable it in Settings → Keyboard → Dictation. Once you do, it is super accurate but a little slower than the previous keyboard dictation. Worthy trade-off, IMO. (This post was typed using the new dictation feature.)
