Chicken and Dumplings Ingredients * 3 cans low-sodium chicken broth * 2 chicken bouillon cubes * 1 can water (use an empty broth can to measure) * Approximately 3 cans cheap refrigerated biscuits (store-brand or budget biscuits work well) * 1 tablespoon olive oil or vegetable oil Instructions 1. In a deep pot, combine the chicken broth, bouillon cubes, and water. 2. Bring to a boil. 3. Add about 1 tablespoon of olive or vegetable oil. This helps keep the dumplings from sticking together. 4. Tear each biscuit into about 5 pieces. 5. Drop the biscuit pieces into the boiling liquid. 6. Once the dumplings begin cooking, reduce the heat to a gentle simmer. 7. Stir frequently to prevent sticking. 8. Continue cooking until the dumplings are no longer puffy and are cooked through. Notes * Use a deep pot. The dumplings expand much more than you might expect. * The recipe specifically calls for cheap refrigerated biscuits, which tend to break down and puff up well for old-fashioned chicken-and-dumplings style dumplings. Add whatever chicken you want. We have used rotisserie chicken, chicken thighs, baked in the oven and canned chicken. The chicken thighs turned out really well because they have a lot of flavor.
