22. En 1992, le Farm Animal Welfare Council a établi la notion de libertés fondamentales des animaux de ferme. Même si la réglementation européenne exclut expressément l’insecte du champ d’application du « bien-être animal », nous mettons en place dans nos fermes verticales toutes les mesures permettant d’élever nos insectes dans les meilleures conditions possibles.
C’est pourquoi nous avons fait plancher des étudiants en philosophie de la Sorbonne sur la question du bien-être des insectes. En ligne avec nos observations, leur conclusion a été la suivante : la production d’insectes aurait en réalité moins à voir avec l’élevage de bovins ou de volailles qu’avec la culture des champignons ou des végétaux sous serre22. Les insectes sont de fait des animaux tout à fait spécifiques, privés de cerveau à proprement parler (sinon de ganglions cérébroïdes), aux besoins et à l’« horizon de vie », si l’on peut dire, extrêmement calibrés en comparaison des animaux vertébrés et des mammifères. Leur compor-tement renverse même absolument certains schémas de l’élevage traditionnel. Ainsi, leur nature foncièrement grégaire (qui s’explique par leur besoin de se tenir chaud et de faire face à des prédateurs) prête-t-elle à des densités de population très grandes, qui sont éminemment choquantes dans le cas de poulets ou de porcs par exemple. S’il est donc impossible, vu leur hétérogénéité vis-à-vis de notre espèce, d’être sûr de leur épanouissement « psychique » au sein de nos fermes verticales, il est néanmoins assuré qu’ils se prêtent mieux que toute autre espèce à une forme d’élevage technologique. Dans le contexte de nos enjeux alimentaires grandissants, où une forme de massification est incontournable pour nourrir la population à un coût supportable, ce n’est pas, là encore, le moindre de leurs atouts.
