Ouh there are so many nice things. Definitely hike elephant mountain, it has the best view on the city and 101. (Imo) Beautiful sunset. (But lots of insects) and try eating at a night market, I love Yilan Scallion Pancakes (I think that’s the spelling but not sure right now)

Oh and maybe try one of the claw machines; they are super popular and can be fun. If you like going up mountains, the Maokong is super nice, the cable car that goes up there is on their public transport plan and has nice views as well. They offer tea and ice up there, but the cable car was best imo
