I've actually seen one of those out in Eastern Washington; my family's always assumed it was an outhouse, but it seemed too far from any other buildings (in the order of km). Never been able to figure out just what it was.
Now that you have a proper answer, I will offer: "Lifeguard tower to watch for people drowning in the wheat"

Hunting blinds for deer or small game coming into the fields
As some have already said, they are for hunting. And outdoor sex. Possibly while hunting.
Oh yeah, we have those across the border here in Alsace too. Haven't seen boars in the fields yet which would be the primary target, though there has been multiple sightings of deers in my bus commute.

as everyone said, it's a hunting blind. the ever practical Germans just call it a "high seat", while in Polish for some reason they're called "lecterns" (of the church variety)
That looks exactly like the hunting blinds that are everywhere in the Midwestern US. I would have assumed that Germany has much less of a hunting culture, but I have nothing to base that on.

good news, that is literally their name. Hochsitz (elevated seat), are used for hunting mostly
