dry pork belly poke holes all over skin cover skins surface w salt to draw out moisture and wipe off after 20 min one inch wide shallow cuts on both sides (dont cut thru fat) mix and apply this marinade on meat side only, make sure get the grooves and wipe off any that gets on the skin 1/2 tsp black pepper 1/2 tsp garlic powder 1/2 tsp onion powder 1/2 tsp five spice powder 1/2 tsp sugar 1 tsp soy sauce - low sodium 1 tsp totle chicken powder 1 tbsp shao xing cooking wine put meat on foil, skin side up brush skin with white vinegar wrap foil boat around meat so top is exposed still brush skin w white vinegar again leave in fridge uncovered for 24-48 hrs (or overnight if u need to) airfry 300degrees f for 30 min then 400degrees f for 5-10 min to crisp skin, watch carefully atp bc it can burn easy
