A simmering pot of red wine beef reduction. Recipe: one large onion, half quantity of rough chopped carrots, half quantity of rough chopped celery, one bunch of parsley stems, half a small can of tomato paste, 2 tbsp of crushed garlic, 3 tbsp of peppercorns, a couple pinches of salt, bottle of French Cab, 4 cups beef stock. Saute veggies first, then add garlic and tomato paste, add liquid once fragrant, add herbs and spices. Simmer until half volume, add 1/4 stick butter and stir until melted and cool.
