a loaf of cinnamon and raisin bread. I usually start the dough while I am making dinner. The dough sits overnight. Recipe: 375g flour, 270g water, 7.5g salt, 2.5 g of yeast. I then add about half a cup of raisins and a teaspoon of cinnamon. I add the flour and whisk in the yeast. Then I add the water, mix well, cover and leave for a hour or so. Then I add the salt. I then put it covered in the fridge overnight. The last thing I do before bed is fold in the raisins and the cinnamon. Next morning I put my dutch oven into a 475 stove for 30 minutes to warm up the dutch oven. Then 35 minutes covered in the dutch oven followed by 10 minutes uncovered for the crust. mmmmmm

These figures in one of the several fountains in the Piazza Navona represent four Tritons (mythological sea creatures with the upper body of a man and the tail of a fish). The fountain was designed by Gian Lorenzo Bernini in 1653, although it was later modified by the sculptor Giuseppe Pannini in the 18th century, who added the figures of the Tritons.
