I typically start with frying a chopped onion until its translucent, add garlic and a nob of ginger, a chili pepper or two and some red pepper flakes for heat, then add in some garam masala, cumin, curry powder, cook that for a bit, add a can of crushed tomatoes, can of chickpeas, and a can of coconut milk. I end up simmering it for maybe 20-30 minutes or so and add a bunch of fresh cilantro and a good squirt of lemon juice just as I take it off the heat. I usually serve it with rice. Pickled onions can be a tasty topper to it as well, and adding a bunch of spinach prior to letting it simmer can be very tasty as well.
