It does correctly get saved in the protocol data too, this looked like it was strictly a bsky.app UI limitation...... But then I noticed that, if you click "Other", it allows you to pick multiple!

There is, however, no way to tell what language tag is in a post from the bsky UI; it's only in the protocol data and presumably used in the backend
