Cleaning out my saved Reddit posts and found this gem for interpreting sourdough crumb structure as it relates to fermentation time. Plenty of other factors that go into crumb structure (shaping/folding, starter, flour mix, etc), but fermentation time is crucial. This reference is the 🐐 #breadsky

Thank you so much for posting this!! Making bread a couple years now and I believe this will allow me to tweak my proofing time on multiple recipes and circle in on/around that beautiful middle row.
