This text will be shown if the image can't load and it's read out aloud by screen readers, that's the tools used by people with e.g., a visual disability...

to navigate and experience the web without or low vision (it basically reads out what's on the screen, very interesting, look for a demonstration video!). By adding alt text you make your work more accessible for everyone and make the web a little more inclusive altogether :>
