I chickened out at an hour twenty for the onions. 40 min only got me to “nicely sweated.” 😅

It usually takes me an hour or more as well - I sometimes roast onions instead because caramelizing is so time intensive!
I kind of wonder if the 30-45 minute times for caramelizing onions is for people using a commercial range.

Yum! (Also you can do it in a slow cooker or an instant pot set to "slow cook", you just ignore it for some hours until the aroma summons you. Make in batches and freeze!)
