Physically, the planes can fly through them, but the pilots always insist on spending 3 hours flying around them because turbulence makes people sad 😭

Liability. Having an overhead bin or 2 pop open and dropping on people's noggins is a lawsuit waiting to be filed. Also, the planes can take the turbulence, people less so. I was on a flight to ORD where the pilot couldn't avoid storms. Barf bag chain reaction. I think a 1/4 of that flight puked.

I'm sure a lightning strike would give someone on board a heart attack too, even if they're aware planes are designed for that.
They don't fly through bc while a plane is meant to stay intact during a severe upset, it doesn't mean the plane is gonna be happy about it. Aircraft have to be inspected for everything from excessive bank angle to Gs to speeds, and thunderstorms make those exceedances REALLY easy.

Airliners are designed to survive lightning strikes but inspections after are mandatory so even if we ignore turbulence, airlines would rather avoid having to do that constantly

There’s an old Air Force saying that my flying instructor told me.. There is no reason to fly through a thunderstorm in peacetime
Go around. They can fly through them until they can't and then it's too late. Or better yet, wait until there's no storm in the path.

Turbulence also makes those with motion sickness violently ill in ways they can't necessarily prevent in an enclosed space that others can't get away from which may trigger them to become ill as well, so probably good to try to prevent that.
