Making homemade noodles. Beaten egg, salt, water, all purpose flour, kansui (lye water). Mix and knead. Let the dough rest for half an hour. Roll and cut the noodles. Dust with tapioca flour to prevent noodles from sticking. Boil the noodles. Set a bowl of noodles. Add toppings, broth. Enjoy!
