However, the internet warns against mixing narrow and wide SCSI devices on a bus and I am getting hang-ups when doing big copies from a SCSI CD device.

I'm not sure if mixing is the issue, that seems to be an issue if you place a narrow device on a wide bus and not vice-versa. Nevertheless, I think the final setup is going to be no CD drive, taking CD content instead via Ethernet or Localtalk from the Beige G3/G4, and disconnecting the int. drive.
