Because the ribs are cut apart instead of being cooked as a rack, each one gets perfectly seasoned and completely glazed all over. To nail that textural balance, use thick, restaurant-style tortilla chips -- or fry your own -- the thin supermarket varieties will sadly turn to mush. This recipe coats the chips in just a small amount of smoky, citrusy tomatillo salsa, which helps them withstand the egg cooking process and retain their bite. Using the same skillet to char the salsa ingredients and cook the eggs on top of the chips streamlines prep and clean-up. The addition of canned black beans adds heft, making this an ideal breakfast-for-dinner meal. Serve it doused with the remaining salsa and generous scoops of sour cream and avocado to offset the heat and acidity.</p>

<p>These thick and buttery shortbread rounds are a riff on the ones sold by Walker’s Shortbread in Scotland. The main point of difference between Highlander shortbread and other varieties is the sparkly Demerara sugar that coats the edges, adding a distinctive sweet crunch. Using a small percentage of rice flour or cornstarch in the dough gives these an especially crumbly-soft texture while using all wheat flour makes them slightly snappier. Use what you have, relish the results.</p><p>Total Time: 2 hours</p>

<p>Together, sardines and avocado make a rich pair. Here, the combination is balanced by rubbing a raw garlic clove on the warm toast and stirring together a vinaigrette right in the sardine tin using its seasoned oil. (You could also add capers, chives or everything bagel seasoning for more punch). Instead of slicing the avocado, scoop it out with a spoon, so that the vinaigrette can pool inside the little nooks instead of slipping off the toasts. Now’s also a great time to use smoked or seasoned sardines.</p><p>Total Time: 10 minutes</p>

Start by browning the mushrooms to build serious flavor. The jamminess of guajillo chiles and the raisin-like flavor of ancho help build a broth that’s complex, velvety and quietly intense. A can of hominy keeps this within reach on a weeknight, but dried hominy, soaked overnight and simmered until each kernel blooms open like popcorn, gives the most tender chew -- see Tip for instructions. If you spot refrigerated pre-cooked hominy at a Latin market, grab it (the texture is very similar to freshly cooked). Ladle this pozole rojo steaming into shallow bowls and pile on the contrast: crisp shreds of iceberg lettuce, a generous squeeze of lime and thin radish coins for a peppery snap. It’s exactly the kind of bowl that makes you feel warm and revived.</p>
