They've never quite figured out how meat works in the universe. There's tons of scattered references to eating Pokemon, yet for eight generations you see nothing but vegetarian food (and discarded Slowpoke tails). There's some indications that it's become less common, but others that it hasn't.

I'd say S/V is breaking the ice with meat that humans eat, so long as they don't tell you where the meat came from. All these foods that clearly have it in that game have descriptions that merely describe their flavor and almost nothing more (I think one seafood dish mentions it's freshly caught)

You can sort of read it as, in the past eating Pokemon was universal, but lately vegetarianism has gotten popular, and there might even be a taboo against discussing where meat comes from. Paldea having meat everywhere could be a cultural difference or a sign that artificial meat is becoming common.
