This open-faced egg salad sandwich uses all the pickled stuff in my fridge. Pickled cucumber, pickled red onions, pickled jalapeños along with two eggs (boiled for six minutes and forty seconds then shut off the heat and let sit for two minutes before putting on ice for about 3 minutes) there are two pieces of bacon diced and mixed within the egg and mayonnaise. it is topped with avocado slices and sprinkled with cayenne and a smallest amount of tarragon because I don’t really like it. I used about two tablespoons of mayonnaise. I made mine from eggs and avocado oil salt and white wine vinegar. The bread was toasted before adding everything on top. You can use another piece of bread if you want to be a monster.
