Harvest Cake (aka fucking good apple cake) 4 cups diced apples 2 cups sugar 3 cups sifted flour 1 cup cooking oil 2 eggs 1 cup chopped walnuts 2 teaspoons baking soda 1 teaspoon salt 1 teaspoon cinnamon 1 teaspoon nutmeg 1 teaspoon vanilla Mix apples and sugar, let stand 1 hour.
