I make my own on occasion. You have to repeatedly slam the meat on the counter to get rid of any air voids, so it cooks dense enough to slice thinly.

you didn't fry the slices a little? Oh for shame.... also, if you want this often salt your meat with 1.5% salt by weight, lightly mix and then rest the meat. Then give a thorough mix and bake in a covered pullman pan. Chill and turn out the meat to slice thinly. Lengthwise in half, then in strips

I was in England in the early 80s and there was a kabob shop that used a red sauce on their kabobs. I don't believe it was tomato based, but it was delicious and haven't had it since. What is the flavor profile of that bottled sauce?

These look so good! Maritimer stuck in Quebec 👋 I can only get my donair fix from kits sold at Giant Tiger. They come close to scratching that itch but not quite. I can do a scratch verson but takes long & isn't quite it. I have one daughter, born in Qc; she tried donairs & didn’t like them 😱 💔😂

I live in Victoria and due to the east coasters in the navy ranks there are a few places (esp close to the base, go figure) that do Halifax-style donairs. I'm not complaining :D They're a semi-regular meal fixture on the ships, too.

Lived in Canada for a while and what we in Ireland/UK would call a kebab would be called things like kebob and kebap. And now I'm seeing "donair" instead of doner. We need some kind of standardisation on this I think.

In Ontario and crave them all the time. The garlic sauce is easy to make, and I can get the bread, but the right meat is more elusive. There was a Halifax Donair takeout place where I lived last, but we moved in 2024. *SIGH*

We were very curious about these when my wife and I were traveling in Nova Scotia. We never got a good answer as to what it was made of. The standard response was “donair meat”. At one point I asked a waitress how many legs a donair had.

Definitely want to try this. When we lived in Toronto, we used to go to Matt’s‘s restaurant all the time. A a kid, I remember taking the ferry to Halifax and having a donair and orange Julius at the mall.

The only reason I don't have donairs is that I don't like the sweet sauce. But I'd replace that (and I know this no longer makes it a Halifax donair) with some nice fresh tzatziki, and I'd go to town on it.

Yeah. There are a few recipes out there. The spicing is up to you really once you get the basics down. The sauce is mainly sweetened condensed milk and garlic. Tomatoes and onions and nothing else. Nothing. If you put greens on it we will come for you. If you fry it a bit after slicing it’s good.
