Loose watercolor is annoyingly hard until it suddenly works for a minute. This sounds familiar.
Almost forgot: Bigger brushes! A tiny one can't release enough water for the laws of physics and fluid dynamics to really come into play. Try a #8, or bigger. If you have one that comes to a nice point, you can add details to sparkle it up without losing the big-brush flow you need.
On the same journey. 1. Every piece doesn't have to be loose. If it works better with controlled detail, make it sing! Let it stand alone, start the next one. 2. The hardest thing in watercolor, for me, is letting go and getting out of the paint's way. Letting it tell me what's next.

It’s gorgeous! Trying something new is always difficult, and yeah, sometimes the best thing to do is walk away and come back to it later! I’ve left stuck paintings for months and after that refresh sometimes i can fix it in a day, haha :) Good luck with your experiments!
I have the same struggle. Trying to paint what’s the essence and getting bogged down in the details.
