• 240 g or 2 c flour (I used millet, oat, white rice and sweet rice, at least 20% should be sweet rice) ½ tsp salt 2 tsp baking powder approximately ½ tsp baking soda approximately • 150 g sugar • 120 ml fat (40 g melted butter and 80 g olive oil) • 80 g yogurt • 1 egg • 1 tsp vanilla extract • ½ tsp almond extract Mix fat into dry ingredients, then add yogurt and egg and extracts. Pour into parchment lined dish and bake at 350 for 30 minutes ish Prepare frangipane • 6 tbsp softened butter ½ C sugar • 1 egg • 1 c almond flour • 3 tosp flour • 2 tsp almond extract • ½ tsp salt When cake is done spread frangipane over hot cake, top with almond flakes and bake an additional 10 minutes
