Recipe card for Sarah's Baked Pancake. Ingredients: 4 eggs, 1/2 teaspoon lemon zest, 1/2 teaspoon salt, 1/3 cup sugar, 1 scant cup flour, 2/3 cup milk, 1 teaspoon vanilla extract, 1 cup jam or fruit, 4 tablespoons butter. Directions: 1. preheat the oven to 425 degrees F. Put butter in 14 inch cast iron pan. 2. whisk together eggs, zest, salt, vanilla to smooth (optional: 1-2 teaspoons cinnamon, nutmeg, clove blend). 3. Add flour and milk. Whisk to mostly smooth. 4. Add the fill. Mix well. 5. Melt butter in pan on stove. Remove from heat. (optional: dust melted butter with cinnamon). Pour batter into pan. Place in oven. 6. Bake 24-26 minutes or till cooked through. Serve warm dusted with powdered sugar or topped with whipped cream. 7. Serves 4-6. With image of peach baked Pancake.
