Despite the 30º heat I baked yesterday. What was I thinking! I had a bag of eikhorn flour that i wanted to try but had forgotten. Turns out you don't need as much water or proofing, it's sticky and I had to use a tin to get some shape. Very crumbly, has little gluten, and tastes really good!
