I was having a good conversation with my buddy about "server uptime" and he brought up the fact that having 300+ days of uptime USED to be something to brag about. Now we deal with CVEs almost daily. I'm interested to hear everyone else's thoughts as someone that manages hundreds of servers.

Spot on. High uptime used to be a flex; now it’s a security risk. In the age of daily CVEs, regular patching is the real badge of honor. I'd take a reboot over a breach any day!
