For me, it was a monday (night)
Short on time and expecting the usual head-on assault, I prepped the evil city vault's first two rooms. Players opted for a back-door stealth operation. They navigated the vault theatre-of-the-mind while I drew the layout on the spot behind the screen. Ended up being a favorite at the table.
My friends and I had gone to a lake house for a weekend. D20 modern game set in space, everyone had just played Mass Effect 1 so I made a explore a derelict spaceship game, I had 3 hours to prep.
Mage the Ascension oneshot I did for a friend of mine I improvised the whole thing and it was one of the best sessions I ever ran My friend even joked I reached the GM's Arayashiki The whole session was him running around the city searching for stuff and it was peak
I think it might’ve been a session of Monsterhearts. I had prepped a little bit of over-arching themes and effects from things they caused. My intention was for each session to be a day in the week before prom. But the way they handled things made me have make up an entire session.

Tossup between an oceans 11 style heist on a necromancers house and what was supposed to be a massive battle where the party took a slaver ship. They killed almost the entire crew of 36 before the surprise round was over. (DAMN good plan.) So I had to wing the rest of the night.
Write a base set up of "go get book", the MacGuffin to get the party close to a Heucuva someone wanted as a monstrous cohort. That lead to an arc of redemption for a tortured soul that covered 7 or 8 levels of pc growth
Session 0 in the last two campaigns I DM’d. N neither did players follow what the module thought they would do. I ended up making everything up.
Hard to say as I just wing most sessions. I mean I do plan but I just leave a lot open to keep things flexible. The best ones tend to be ones I can stitch in plot threads from old sessions or better from old campaigns.
Recently did a session of candella obscura where the INTRO was going to be a PC being impersonated by a shapeshifting monster. It was suppose to be a short thing where the monster attacked the PCs brother. And another PC came to save him. I let the PCs player take the roll of the monster and 1/2
April 1st themed one shot where players raced as a team of villains against different heroes. The Alien infiltrating Howl's Moving Castle, players murdering a fairytale team on the starting line, and convincing Princesses of the threat of Red Workers Revolution were extremely hilarious
Castle Infiltration so the party could get the King alone to ask a favour. Involved them pretending to be a cook and a band of bards and essentially crashing a dinner party with the entire Noble council in attendance. I made up the map, dinner discussions and the Nobles themselves at the table

Curse of Strahd. I winged a tiny adjustment to the cursed lake, and the players locked onto it. Made EVERYTHING up on the spot and it was one of the most memorable sessions I’ve run in 25 years of DMing.
My whole ass campaign. I wrote sessions the morning of session. There were a few weeks there where I was still writing as people were showing up in Zoom.
Lockdown VTT. I accidentally made an NPC token the same as one of the players. I don't notice until one of the other players pointed it out. His Long Lost Cousin became a subplot before meeting a tragic/pathos drenched end!
