Afaik, “hibachi” as we know it in the states is actually more akin to Teppanyaki, which is a different method of cooking. Hibachi is a style of cooking over a coal grate grill, and teppanyaki is a style of cooking on a flat-iron griddle. Hibachi is a portmanteau of “fire” and “bowl” in Japanese!
