Cut in half, as pictured, and dig out and discard the seeds. Plop a half-ish tablespoon of butter and some ('bout a spoonful?) brown sugar in each half, bake at 450F (230C) for about a half hour or until its soft. It's even its own bowl (you don't eat the skin :P)

There are other ways that are more savory, but this is what I'd recommend for something like a semi-dessert.

Yum! I do something similar with a large sweet potato - bake it in its skin until it starts to soften, then cut it open, scoop out the flesh, stir it in a bowl with butter, brown sugar, and whatever nuts and dried fruits you feel like adding, then scoop the lot back into the skin and bake again
