Basic Pasta Verde Sauce - (adapted from Practical Kitchen) 5 oz fresh spinach 4 oz ricotta 4 oz cream cheese Half a shallot, minced 4 garlic cloves As many cracks of black pepper as you care to enjoy Salt to taste Juice of half a lemon Whatever fresh green herbs you enjoy (basil and parsley are what I had) 1/4 cup of stock or water to deglaze (optional) In a large pan, sautee the shallot and garlic until translucent and fragrant. Add the spinach and cook until wilted (this is where I add the stock to help the spinach wilt). Season generously with salt and pepper. Add the spinach mixture, cheeses and fresh herbs and blend until smooth. Return to the pan to keep warm until pasta is finished cooking. If the sauce is too thick, add the pasta water a ladle at a time. Add the lemon juice and maybe a couple more cracks of pepper for good measure.
