Small section of a cinnamon stick, ~15 pimento berries, couple cloves, ~8 black peppercorns, freshly grated nutmeg, three garlic cloves, a little ginger, half a small onion, a scallion, handful of fresh thyme, Scotch bonnet (though I subbed in a Madame Jeanette), tablespoon of brown sugar, a little lime juice, splash of Worcestershire, two tbsp dark soy sauce, a little salt, some oil.
