Tonight it's chicken with herbs and vegetables roasted in a Dutch oven. Baby potatoes and Brussels sprouts line the bottom. On top goes the chicken ringed by carrot chunks, onion, dried hot peppers from our garden, and a wilted old red pepper that really had be used. I protect the bird with a few slices of bacon that I'll slice and toss with the veg when done, and l lubricated the oven with some white wine dregs, some vermouth and some olive oil to prevent burning I added sage, rosemary and thyme and then seasoned with a bit of salt and a lot of pepper.
