Sunday Cheese Reviews University of Minnesota Aged Habanero Cheddar Semi-hard Minnesota 🐄 🧀 with added chilis. I would guess a 6 month cheddar, creamy, very little sharpness. The pepper balance was excellent, which is hard with Habanero. Addictive; I ate it in one sitting.
Sunday Cheese Reviews University of Minnesota Manchego Semi-hard Minnesota 🐄 🧀 with wax coat. Not sheep milk as Manchego should be, it is somewhat salty, not as aged or hard as European Manchego. There's nothing wrong with this, except it's in no way Manchego.
Sunday Cheese Reviews University of Minnesota Parmesan Hard Minnesota 🐄 🧀. Not as aged, as salty, as dry, or as hard as Italian buffalo parm. The flavor is there, but mild. Unlike "real" parm, it can be sliced; slices added to pizza brought out thd flavor.
Sunday Cheese Reviews University of Minnesota Chipotle Gouda Semi-hard Minnesota 🐄 🧀 with added chilis and thin wax rind. A sweet young gouda (reviewed here before), the chipotles are a great addition, the smokiness balances the sweetness and it's like a lightly smoked gouda.
Sunday Cheese Reviews University of Minnesota Aged Yellow Cheddar Semi-hard Minnesota 🐄 🧀 with added annatto. I'd guess aged 4 months, it's a very creamy standard cheddar with just a bit of sharpness. A basic all-purpose cheese.
