Yeah that bunny is DRYYYYYY. That cut on the side looks like white turkey meat.
Way too dry by itself, but wonderful as some seasoning meat for a pot of beans, greens, etc.
Have to treat that like chicken breast or pork tenderloin. I can envision cold smoking it up front, then cooking hot and fast to finish, but that's a lot of work.
