flling- Peach Cobbler • 2 and a half lbs ripe, but firm peaches (6 to 7 medium One quarter cup (1 and three fourths oz) sugar 1 teaspoon cornstarch 1 Tablespoon lemon juice pinch of salt biscuit topping: • 1 cup (5 oz) all-purpose flour • 3 Tablespoon, plus 1 tsp sugar • three fourths quarter teaspoon baking powder • one quarter teaspoon baking soda One quarter teaspoon salt 5 Tbsp cold unsalted butter. cut into one quarter-inch cubes • one third cup plain whole-milk yogurt Adjust oven rack to the lower-middle position. Preheat oven to 425° Peel peaches, then halve and pit each. Using a small spoon, scoop out and discard dark flesh from pit area. Cut each peach half into 4 wedges. Gently toss peaches and sugar together in a large bowl and let sit for 30 minutes, tossing several times. Drain peaches in colander set over large bowl. Whisk one quarter cup of drained juice (discard extra), cornstarch, lemon juice, and salt together in small bowl. Toss with peach slices and transfer to an 8-inch square glass baking dish and bake until peaches begin to bubble around the edges (about 10 minutes). While peaches are baking: pulse flour, 3 Tbsp sugar, baking powder, baking soda, and salt in food processor. Scatter butter over the mixture and pulse until it resembles coarse meal (about 10 1-second pulses). Transfer flour mixture to a medium bowl; add yogurt and toss with rubber spatula until cohesive dough is formed (don't overmix or the biscuits will be tough). Break dough into 6 evenly sized, but roughly shaped mounds and set aside. After peaches are done baking, remove them from oven and place dough mounds on top (spacing them at least 12-inch apart so they do not touch). Sprinkle each mound with a portion of the remaining sugar. Bake until topping is golden brown and fruit is bubbling (16 to 18 minutes). Cool cobbler on wire rack until warm (about 20 minutes) then serve
