Berbere on brisket is one of my go-tos
Looks like they are doing it right - using mustard to help adhere the rub is normal. The meat at the end looks like an odd color to me. I was thinking it would be more red, maybe even a darker smoke ring. Maybe they aren't using smoke? Wish I new what temperature they cooked at.

I’ve eaten there! the sliced brisket is excellent, but the smoked chicken doro, the brisket sambusas, and the Texas sheet cake with berbere-spiced pecans are even better
